The topic: Breakfast

Usually when Brian’s gone I’ll just have cereal or maybe make an egg burrito.  But this morning I’m going to make an omelet.

It’s been years since I’ve done one, I hope it turns out all right.  I’m going to put green peppers, onions and tomatoes in it.  I’m going to put cheese in it.  I’m going to put avocado in it.  I’m going to sprinkle sunflower seeds in it. 

Then I’ll fold it over, cook a little while, flip it, cook on the other side until the cheese start to melt out, then put it on a plate and put a little dollop of sour cream on top.

Yum!

Last night, I went to sleep thinking about this….

I got out my handy dandy little camera and took pictures as I went along….

The ingredients (note to self; never ever have a kitchen with white grout in white tile, it’s a bitch to keep clean):

Cooking the eggs (I whipped them in a bowl with a little water):

Added the veggies:

Added the cheese:

Flipped the omelet:

Oops, need to work on my flipping skills:

The omelet is served (the stuff on the top is what fell out of the omelet into the pan, not from the oops):

Almost forgot my dollop of sour cream!  A travesty!:

It’s amazing how something that looks so gross tastes so good:

 

 



An interesting (and delicious) variation on an omelet is to beat the eggs with a little milk, salt, and pepper.  For each egg used, mix in one slice of white bread broken into small pieces.  Let this stand for a few minutes to allow the eggs to soak into the bread, then add any additional ingredients you like (I like mushrooms and peppers).  Cook this over medium heat to allow it to cook thoroughly, flipping it when the bottom is browned in order to brown it on both sides.  It will puff up when cooking.  If I add cheese, I like to sprinkle it on the browned top right after I flip it.
