An interesting (and delicious) variation on an omelet is to beat the eggs with a little milk, salt, and pepper.  For each egg used, mix in one slice of white bread broken into small pieces.  Let this stand for a few minutes to allow the eggs to soak into the bread, then add any additional ingredients you like (I like mushrooms and peppers).  Cook this over medium heat to allow it to cook thoroughly, flipping it when the bottom is browned in order to brown it on both sides.  It will puff up when cooking.  If I add cheese, I like to sprinkle it on the browned top right after I flip it.
